Wake up to the delicious aroma of fresh pancakes this weekend. This simple recipe is quick and easy, perfect for a lazy Sunday morning.

What you will need
- 1 & 3/4 cups of full cream milk
- 1 Teaspoon vanilla
- 1/3 cup of castor sugar
- 2 large eggs
- 2 cups self-raising flour
Step 1: Sift flour into a large bowl, then stir in castor sugar;
Step 2 Whisk the milk, vanilla and eggs together. Add these wet ingredients to the bowl with the flour and the sugar and whisk it all together really well so that the mixture is nice and smooth.
Step 3 You will need a large heated pan to cook these in. Non-stick is probably the best if you have one. You can spray the heated pan with cooking oil or if you are like us add a good dollop of butter to the hot pan.
Using 1/4 cup of the mixture per pancake, cook 2 pancakes at a time for approx. 2 minutes or until bubbles appear on the surface. Turn and cook for a further 1-2 minutes or until cooked through.
Transfer cooked pancakes to a plate. Cover loosely with foil to keep warm or place them in a warm oven (low heat). Repeat with remaining mixture, spraying pan with cooking oil or adding more butter between batches.
Serve with fresh berries, maple syrup and whipped cream…yum!
